When you are 24 hours into making sourdough there really is no substitute for a proper banneton basket to provide support to the final shape of your dough as it rests.
Breathable rattan bannetons like these encourage the moisture away from the surface of the dough during its final proof, and it’s that dry outside skin that will stop your dough from sticking, make it easier to turn out, easier to apply your artistic score and easier to slide onto a baking stone too.
Sure, you could probably get away with a colander lined with a cloth but why risk it? These are the real deal, and exactly what I use for my sourdough loaves at home, in my classes and in video 101: Beginners Sourdough Loaf, Start to Finish.
Made from top quality rattan these baskets hold up to 1 kilo of bread dough and each come with a removable screen printed BWJ liner.
Oval Bannetons for LONG loaves measure approximately:
30cm long, 17cm wide, 7.5cm high
Round Bannetons for ROUND loaves measure approximately:
23cm wide, 8.5cm high
Care & Maintenance
Avoid water when cleaning these and instead remove excess dough with a dough scraper and excess flour with a brush.
DO NOT bake bread inside of these baskets, they are for the final proof of your dough only.
