Straight White Dough Spec:

500g Strong White Bread Flour

315g Room Temperature Water

15g Olive Oil

12g Fresh yeast or 7g Dry

8g Salt

Kneaded for 8 minutes. Rested for 90 minutes. Divided into 75g pieces.

Then, Shape your rolls, prove up for 45-60 miuntes and bake 190C fan/374F/Gas mark 6 for 15 minutes with steam.
